Here's a recipe that'll make you look like a really good cook the next time you need to make something! This is easy and very yummy! I make this a little bigger most of the time using a big wilton's sheet cake pan or you can double it and use 2 pans.
CHICKEN BURRITO CASSEROLE
1 1/2 lbs. boneless chicken breast halves ( I use frozen chicken tenders) (don't weigh I just guess how much will cover what size pan I'm using).
2 family packages (2.5 lbs) frozen bean & cheese burritos
( I use the El Monterey and really you need 2 pkgs. or you'll be short) or mix bean & cheese and beef & bean.
1 cup milk
1 can (10 3/4 oz) cream of mushroom soup (or cream of chicken)
2 cups shredded cheddar cheese (or any mix)
1 carton sour cream
Heat oven to 350
Place chicken in pan, cover in water (barely). Bring to a boil then reduce heat and let simmergently, covered for 10 mins.
Allow to cool and cut into 1/2 inch or so pieces.
Coat a 13x9x2 baking dish with non stick cooking spray. Add burritos, cutting if needed to fit in a tight single layer. (you will need 10 to 12 burritos depending on the
brand you're using. (to cut a frozen burrito, just micro for 30 secs. and then cut in half)
Scatter the chicken pieces over the top of burritos.
In a medium size owl, mix together soup, milk, 1 cup or so of the cheese and the olives.
Pour this mixture, evenly, over the top of the chicken and burritos.
Top with remaining cheese ( I use more it calls for and a Mexican blend works good!)
Bake at 350 for 30 minutes or until heated through and bubbly. Broil for a few minutes for a nice browning to cheese if you want.
Cool slightly to let it settle before cutting and serving.
Use dollops of sour cream on top of serving pieces (or sour cream with chives)
( I use a larger wilton cake pan, using 3 pkgs. of burritos. If you have any left it keeps well and heats fast in micro or oven)
You can also use Campbell's, cheese soup, cream of chicken in place of cream of mushroom or any 2 mixed together for a larger pan
for a larger pan or 2 pans also double the olives and chicken. Sliced or chopped jalapeno's could be added, or diced green onion.
This is easy to play with after making it a couple times.
